1) "Continuing effect" provisions in an otherwise-expired contract are valid and enforceable as per their plain terms, so this could definitely still be binding if by their language, they are.
2) If the contract states that working after receiving the contract constitutes acceptance the contract, then so long as you did work after being presented with the contract, it is enforceable both by and against you. Contracts can be accepted by actions as well as signature.
