What can I do if my auto insurer claims that I did not add my fiance to my policy and therefore the totaled vehicle is not covered?
I did not know that i was supposed to do that.

Since your fiance was not on your insurance policy, the insurance company deems him to be an unauthorized driver which is why the insurance company denied liability.
As the registered owner of the vehicle, you are liable for the accident if your fiance was at fault.
