What to do if a customer put a stop payment on a $19,000 check and kept my product?
Now he refuses to pay me. I need help; he is going to put me out of business.

1) You can sue him for the money--he has no right to keep your product but not pay you. You can also sue for costs you incurred due to this stop payment--like overdraft protection charges, late fees or interest from not being able to pay your own obligations, etc.
2) If this was done with criminal intent--i.e. an intent to take your product without paying--then it may be a crime as well, and you could report this to the police.
