Am I entitled to a redundancy package?

My current employer has decided to dissolve the current company I am employed by, create a new one and sell shares to 2 other parties. They have informed us that all staff will be made redundant and rehired as this is the only way to dissolve the company.

No you are not. That is unless you have an employment contract or union agreement that states otherwise. The fact is that most employment relationships are "at will". This means that a company can set the conditions of employment much as it sees fit (absent some form of actionable discrimination).
