Am I required to sign an affadavit for my car insurance company for a suit they’re filing against the person who hit my car?
I was not at the scene. My car was parked. I do not want to agree to appear in court. Am I legally bound to sign? I covered my deductible.

Under mearly all auto policies you as the insured would be obligated to fully cooperate with your insurance company to permit it to pursue its "subrogation rights" against the driver it deems at fault.
