We recently let go a manager that was fired for
being intoxicated while working as well as theft.
Are we required to pay him his entire weeks
salary or can we prorate it for just the 2 days

Yes, you may pro rate it. While you can't reduce or dock a salaried employee's pay for missed hours during a day in which he otherwise does at least some work, you do not need to pay for entire days which he does not work--even if the reason was you terminating him.
