Can a new employee be offered different health insurance?
Our company currently offers 3 different health insurance policies to our staff.
Can they stop offering 1 of those insurances to new hires, while current
employees on that insurance can continue to keep it?

The fact is that not all employees must be treated the same or even fairly. That is unless such treament constitutes some form of legally actionable discrimination (i.e. is based on race, religion, disability, gender, nationality, age (over 40), etc.). Accordingly, unless offering different policies to different groups of employees violates the terms of a union agreement or employment contract, it is legal.
