I was approved overtime and my hourly wage was changed without any knowledge until I received my check.

Although there is no requirement that you sign any papers, an employer cannot change your rate of pay retroactively. Thus, you are required to be paid at the rate that was in effect at the time you performed the work. Any change in compensation must be communicated before the work is done, but it does not necessarily have to be communicated in writing.
