If my co-workers and I are snap chatting funny stories to each other, off the clock and not at work. If my employer thinks they are offensive. Can they threaten to fire me?

Yes, you can be fired for this. In fact, you can be terminated for any reason or no reason at all, with or without notice. That is so long as such action does not constitute some form of legally actionable discrimination (i.e. is due to your race, religion, disability, nationality, gender, etc.) or so long is it does not violate the terms of an employment or union contract.
