Can they fire me if an employee heard me say,
I was talking to my co-worker about how we noticed our manager only hires Asian people and some other employee heard our conversation and supposedly she got offended. My manager said she was going to talk to HR about it. Now I’m nervous; I don’t think that I said anything wrong. I just said what I observed and what I thought.

An "at will" employee can be fired for this reason, any reason, or no reason at all. That is unless their termination would constitute some form of legally actionable discrimination (as it doesn't) or violate the terms of a union agreement or employment contract (which you did not mention). Therefore, yes, your job coud be in jeopardy.
