Forced overtime vs family responsibilities

My mother is 89 years old. I am her sole caregiver. In the morning before work I
wake her up, give her pills and breakfast. Meals on wheels brings lunch. After work
I fix her dinner and make sure she takes her pills. My supervisor is unwilling to limit
my overtime to 1 or 2 hours a day to allow for me to care for my mom. Is there
anything I can do? Apart from quitting my job?

I'm afraid not. At least not unless you have specific rights regarding your hours under the terms of an employment contract or union agreement. Otherwise, you are an "at will" worker which means that your employer can set the conditions of the workplace much as it sees fit (absent some form of legally actionable discrimination).
