If I’m the sole trustee of a Trust, do I have to give a copy of it and the pour-over Will to the county for its records?

If so, is there a timeframe?

Do you mean do you have to file a Probate in the Probate Court in the county in which the decedent resided at the time of his or her death?  Without knowing more about the facts of your particular matter I would say that filing protects the assets, especially if you find that some were not placed in the Trust prior to death.  That is the beauty of the pour over Will.  Good luck.
