If I answer that I fell at the skating rink and I signed a
waiver that I skated at my own risk. Will they deny paying
for my care and I am responsible for all of it?

Are you referring to your health insurance? Your health insurance should pay regardless of the location you were at, activity your were doing, or the existence of the waiver (whose purpose is to protect the rink from being sued by you--it has nothing to do with anything else). So this should not be a factor.
