If I just got issued a ticket for misdemeanor theft and it is my first offense, what is my next step?
I do not want this on my record. Should I pay the ticket when it comes in the mail or should I go to court?

If you do not want a misdemeanor conviction on your record you need to consult with a criminal defense attorney as to the best way to try and resolve the serious criminal charge against you which is pending. You will not receive a ticket in the mail.
Rather you will receive a hearing date for your arraignment where if you are convicted of the offense you will be fined, possibly jailed and end up with a criminal record.
