If you loaned the person the $200 through a check you would have a receipt, the cancelled check.
As to your question, you can record the conversation with this person face to face legally. There is no justifiable expectation of privacy regarding a recording in that type of a circumstance. However, you care not allowed to record a telephone conversation legally without the other person's consent under the laws of all states in this country.
