If I quit my part-time job to take a full-time job that fell through, would this be considered good cause for collecting unemployment benefits?

No, unfortunately this would not seem to be considered grounds to collect unemployment benefits: you chose to quit your existing job voluntarily so you would not eligible to collect UI for that job; and if the new offer "feel through" but you were not actually terminated, you would not be eligible for UI for that position. Voluntarily leaving a job, no matter how good the reason, does not make one eligible for unemployment insurance; and to receive them, you must be fired from a job (and not for cause), and not have a hoped-for job not materialize in the first place.
