If I want to post a sign out front of my business asking a debtor to pay his bill, what legal problems might I get into for doing this?

Assuming the particular debtor does in fact owe you money for the amount that you want to state is owed on a sign out in front of your business, I see no legal impediment from doing what you want to do. What you desire is similar to a merchant's posting of checks by customers that fail to clear in plain view at one's store. Such practice is done all the time in California as to checks that fail to clear.
