Can a general contractor just quit in a middle of a project without any legal recourse on our end?

We are renovating a bathroom and the contractor hired a tile guy that didn’t really know what he was doing and the tile around the bath tub has to be redone and we have order new tile. With some arguments the contractor quit with a half tiled wall and very incomplete bathroom. If we hire another contractor we probably have to start over again. Is there any legal recourse on our end?

Yes.  You will have to sue on the agreement.  If he refuse to finish the job, you have no alternative but to hire someone else and then seek damages.  Your new contractor must be willing to testify on your behalf, if needed. Good luck.
