Is it legal to record a conversation with employees without their knowledge in Texarkana Arkansas?
There was a dispute on a quality issue with
management and due to her practice of leaving
details out to benefit herself, I recorded the
conversation.

In AR, so long as at least 1 party to a conversation consents to its recording, then such a recording is legal. In this case, since you were a party to the conversation in question, then you had the legal right to record it.
