If a misdiagnosis resulted in the removal of my apendix and thousands of dollars in medical expenses, do I have legal grounds to recover any of my expenses?

Post surgery lab results found nothing wrong with my appendix.

Wow! You have a much bigger claim than a claim for medical expenses. Please call an attorney. In addition to your out-of-pocket medical expenses, you can bring a professional negligence ( malpractice ) action against the hospital, surgeon, and maybe even the nurses. You nmust, however, prove that there was a misdiagnosis and that misdiagnosis was due to the doctor's negligence rather than the normal risk. If the misdiagnosis was not due to the doctor's negligence, then you may be stuck with the bills. Your attorney would have to hire a medical expert to reveiw your hospital and medical records to determine if the misdiagnosis was due to carelessness or negligence.
