My employer owes me 10k and they don’t want to pay me.
I get paid from commissions from sales
that I make. I started working with this
company in July. I’ve made over a
250k and I’ve only been paid 12k.
They still owe me 10k. I’m leaving the
company and they don’t want to pay
me what they owe me.

You can sue your employer for breach of contract / account stated. Your damages (monetary compensation you are seeking in your lawsuit) would be the amount you are owed.
Upon prevailing in the case, you can also recover court costs which include the court filing fee and process server fee.
