As an ex-employee, you have a legal right to be paid for the work that you performed. If you are not paid, then you may sue your former employer to recover all sums owed. Additionally, you could contact your satte's department of labor to file a complaint.
Note: If you ex-employer is withholding your wages due to some money that you may owe them or the like, they may only do so with your consent. Otherwise they will have to sue you for it.
