What to do if my partner said they added me on the title as homeowner but I never signed anything?

Is this possible? I do get tax bills in my name but the mortgage bill does not have my name on it.

It is entirely possible that your name is now on legal title to the unit you are writing about without you signing any document such as a deed. It seems that you have the best of all worlds. Title to the subject property and no legal obligation to the loan. From what you have written I do not see anyhting that you need to do as to the unit.
