An employer must make "reasonable accommodations" to an employee's religious practices. That would include either excusing an employee from a meeting (and possibly letting them have a separate meeting later) or scheduling the meeting around religious observances. If you were to terminated for not attending a Sunday morning meeting, you may have a religion-based employment discrimination claim, and should--if that happens--contact the federal EEOC.
