What to do if my wife has an audio recording from my cell to an escort and me asking her rates, location, if she is clean, etc?

How damaging this could be if she files for a divorce in the settlement? Could I also counter it as an infringment in my privacy?

If you live in a state that allows such recording, it will damage your divorce proceedings and more. This isn't criminal court, so even if it is not used, your wife csn be asked about and so can you. Your wife can get the phone records too and use it. Consider consulting a divorce attorney before your next steps.
